Carrot Soup

When I posted Food Justice: Have You Voted Today and how Harlem Seeds was making a difference, I didn’t post a picture of the Carrot Soup I made. That may have been because the group shot of the Harlem Seeds Summer Program at Minisink Town House was the real attention grabber. I revisited the soup today, so here’s a picture of the finished product.


You have probably noticed a theme here, I like chopped cilantro as a garnish on vegetable soups. Watch the salt. If it begins to taste salty, you’ve used to much. I like pepper so I gave the soup a good pinch. Vegetable soups, stews and chili help me meet my goal of making one of my daily meals vegetable/nutrient dense.
